Parmesan Crusted Chicken


Another protein that's great to make in advance. They crisp nicely in the oven the next day. I often serve it with zucchini because it's so quick to make. 



  • 8 chicken tenders

  • 1 whisked egg with a splash of water

  • 1 cup fine parmesan

  • 1 tsp coconut flour

  • 1 tsp garlic powder

  • Salt and Pepper

  • 2 Sliced Zucchini

  • Avocado oil for frying



  1. Mix parmesan, garlic, flour, and salt and pepper to taste

  2. Dip chicken tenders in egg and roll in parmesan mix. Coat thoroughly

  3. Fry in apx 1 Tbsp avocado oil until golden brown and set aside

  4. Add another Tbsp oil to pan and add zucchini with salt and pepper

  5. Serve when tender, apx 3 minutes
