I love salads because they're so fast! The reason they're fast is because I keep cooked protein on hand, including the protein used in this salad:
- Hard Boiled Eggs
- Chicken Thighs (they have more fat than chicken breast and are available at Costco!)
I also had crumbly cotija cheese, diced red bell pepper, sunflower seeds, my cheddar cheese chips, and a bottle of homemade ranch dressing ready to go.
So, the prep of this meal was just slicing already made food and assembling.
Precooked Chicken Thigh (fattier than chicken breast)
Hard Boiled Egg
Cotija cheese or Parmesan cheese (or your favorite)
Diced Red Bell Pepper
Cheddar Cheese Chips
Homemade Blue Cheese or Ranch Dressing
Avocado oil for drizzling
Any of your other favorite veggies!
Assemble ingredients and enjoy!
