Keto Cobb

 

 

I love salads because they're so fast! The reason they're fast is because I keep cooked protein on hand, including the protein used in this salad:

- Hard Boiled Eggs
- Bacon
- Chicken Thighs (they have more fat than chicken breast and are available at Costco!)

 

I also had crumbly cotija cheese, diced red bell pepper, sunflower seeds, my cheddar cheese chips, and a bottle of homemade ranch dressing ready to go. 

So, the prep of this meal was just slicing already made food and assembling. 

 

Ingredients

  • Romaine lettuce

  • Precooked Chicken Thigh (fattier than chicken breast)

  • Hard Boiled Egg

  • Crumbled Bacon

  • Cotija cheese or Parmesan cheese (or your favorite)

  • Half avocado

  • Red Onion

  • Diced Red Bell Pepper

  • Sunflower Seeds

  • Cheddar Cheese Chips

  • Homemade Blue Cheese or Ranch Dressing

  • Avocado oil for drizzling

  • Chopped Cilantro

  • Any of your other favorite veggies!

 

Instructions
